It’s here! The season of pumpkin is upon us, and to be quite honest, I couldn’t be happier. If you’re anything like me, you wait all year for your first PSL (pumpkin spice latte) of the season, and drool over any and all pumpkin flavored things at the grocery store.
However, we can’t let all the other great fall flavors get overshadowed by pumpkin. As the weather starts to cool down a bit (and hopefully it will because I’m ready to break out my cardigans already!), why not warm up your kitchen with some of these super yummy autumn-inspired recipes!
First and foremost, a slight twist on a fall favorite: Caramel Apple Cider
This recipe comes from Savvy And Sassy and calls for:
10 cups natural apple cider
¾ cup heavy cream
¾ cup dark brown sugar
½ tsp cinnamon
2 tsp pure vanilla extract
Combine dark brown sugar, cinnamon and heavy cream in a saucepan over medium heat until sugar is fully dissolved (watch carefully to avoid burning cream). Add apple cider and bring to a simmer. remove from heat and stir in vanilla extract.
Serve it warm and finish it off with some whipped cream for a decadent dessert drink!
It’s no secret that sriracha sauce is the unofficial condiment of choice for most college students. You can put it on virtually anything to add a little extra spice to your meal. Whether you scoop them straight out of the pumpkin, or buy the pumpkin seeds from your local grocery store, you’ve got to try this recipe for Spicy Sriracha Pumpkin Seeds from Life’s Ambrosia.
You Will Need:
2 tablespoons butter
2 teaspoons sriracha
1/4 teaspoon ground ginger
1/4 teaspoon granulated garlic
1/2 teaspoon kosher salt
2 1/2 cups raw pumpkin seeds, rinsed and pat dry
Preheat oven to 350 degrees.
In a saucepan melt butter. Once melted stir in sriracha, ginger, garlic and kosher salt. Mix well.
Pour sauce over pumpkin seeds and toss to coat well. Lay seeds in a single layer on a baking sheet and bake in preheated oven for 1 hour or until crisp to the bite.
Season with more salt if desired. Serve.
The only thing I like more than a simple recipe, is a simple healthy recipe. This recipe for Daphne Oz’s Dorm Room Apple Snack, is just that! It’s easy enough to make in your dorm room! For this recipe you’ll need:
2 Apples (peeled and core scooped out – leaving bottom in tact)
2 tablespoons Coconut Oil
2 tablespoons Brown Sugar
2 tablespoons Oats
1 tablespoon Pecans (chopped)
1 tablespoon Dried Cranberries
1 teaspoon Cinnamon
1/4 cup Apple Cider
Peel apples. Using a small ice cream scoop or spoon, scoop out the core of the apple leaving the bottom in tact, to stuff the apple with filling.
In a medium bowl, combine the coconut oil, brown sugar, oats, pecans, cranberries and cinnamon. Stuff the apples with the filling. Place in bowl and pour the apple cider into the bottom. Microwave on high for 5 minutes.
Serve with greek yogurt and honey for a sweet topping to a delicious treat that’s perfect for subtle study-break snacking!
Last, but certainly not least, this recipe comes from iheartnaptime.net and is so simple, I don’t know how I have never tried it before! These Chocolate Pumpkin Kiss cookies call for only three simple ingredients. Care to guess what they are?
1 box devil’s food cake mix (chocolate will work too or your favorite cake mix)
1 15 oz can pumpkin (not pie filling)
1 bag pumpkin spice Hershey’s Kisses
That’s right: chocolate, pumpkin, and sealed with a kiss! And the baking instructions are equally as simple.
Pre-heat oven to 350°.
In a large bowl combine cake mix and pumpkin. Stir or use a mixer until dough is smooth.
Line baking sheet with parchment paper or a baking mat. Scoop cookie dough onto the pan and then bake for 8-10 minutes.
Remove pan and allow to cool for one minute on pan. Gently press kisses in the center of the cookies and then place cookies on a cooling rack.
